Reading the bitterness

Lingonberry (Vaccinium vitis-idaea) is a fruit of the genus Vaccinium eaten in the Nordic countries. In sensory profiling attached to a randomized trial of Nordic complementary feeding, lingonberry purée with cow's milk added was significantly lower in bitterness, astringency and flavor intensity than before, and also lower in sourness. In the same trial, cranberry purée with yogurt added changed in the same direction.

The assessors were 13 trained adults, who scored on a 0 to 10 line scale with reference samples. The samples were purées mixed with infant formula, so this does not measure the bitterness of the juice itself. The bitterness values appear only in the paper's figure; the text only reports whether differences were significant. The main aim of the trial was to see whether infants would eat the foods, and the sensory profiling was a side analysis.

Sensory (5)

lingonberry — sensory attribute: bitternesspreliminary

Scope: A comparison of texture design using unsweetened freshly pressed lingonberry juice.

Note: Unsweetened freshly pressed juice is described as "naturally bitter, sour and astringent". External audit N2-2 (2026-10-20): the only basis was search-engine summaries and quoted text; neither the official abstract nor the full text could be obtained (the publisher withholds the abstract), so the status was lowered from supported to preliminary.

Unsweetened freshly pressed lingonberry juice is described as inherently bitter, sour, and astringent.
Limitations: The publisher's full text was not obtained. Based on quoted text found via search engines. Neither the official abstract nor the full text has been checked. Based on search-engine summaries and quoted text (a kind of source the research protocol §5 does not accept as the final basis).

lingonberry — sensory attribute: astringencypreliminary

Scope: Same as above.

Note: Astringency is listed in the same description as bitterness and sourness. External audit N2-2 (2026-10-20): the only basis was search-engine summaries and quoted text; neither the official abstract nor the full text could be obtained (the publisher withholds the abstract), so the status was lowered from supported to preliminary.

Astringency is described alongside bitterness and sourness as a characteristic of unsweetened juice.
Limitations: The publisher's full text was not obtained. Based on quoted text found via search engines. Neither the official abstract nor the full text has been checked. Based on search-engine summaries and quoted text (a kind of source the research protocol §5 does not accept as the final basis).

lingonberry — perceived bitterness is suppressed by: Provision in food structures with altered texture, such as foam and emulsion structures.preliminary

Scope: Sensory evaluation comparing textures with 12 subjects and 8 samples.

Note: Foamed and emulsified food structures are reported to lower the perceived intensity of bitterness, astringency and sourness compared with untreated juice. External audit N2-2 (2026-10-20): the only basis was search-engine summaries and quoted text; neither the official abstract nor the full text could be obtained (the publisher withholds the abstract), so the status was lowered from supported to preliminary.

Foam-like and emulsion food structures were reported to reduce perceived astringency, bitterness, and sourness compared with untreated juice.
Limitations: The publisher's full text was not obtained. Based on quoted text found via search engines. Neither the official abstract nor the full text has been checked. Based on search-engine summaries and quoted text (a kind of source the research protocol §5 does not accept as the final basis).

TAS2R38lingonberry’s genotype is associated with reported rejection of: preliminary

Scope: A questionnaire survey of consumption frequency administered to subjects (n=83) with TAS2R38 genotypes determined.

Note: A self-reported association is reported in which participants with a more bitter-sensitive TAS2R38 genotype (such as PAV homozygotes) eat lingonberries less often. External audit N2-2 (2026-10-20): the only basis was search-engine summaries and quoted text; neither the official abstract nor the full text could be obtained (the publisher withholds the abstract), so the status was lowered from supported to preliminary.

An association is reported whereby subjects with bitter-sensitive TAS2R38 genotypes have a lower consumption frequency of lingonberries.
Limitations: These are self-reported data, not a study that experimentally controlled bitterness perception and intake. Neither the official abstract nor the full text has been checked. Based on search-engine summaries and quoted text (a kind of source the research protocol §5 does not accept as the final basis).

lingonberry — perceived bitterness is suppressed by: Cow's milk. When cow's milk was added to lingonberry purée (mixed with infant formula), the result was rated significantly lower than before in bitterness (p<0.001), flavor intensity (p<0.001) and astringency (p<0.001), and also lower in sourness (p<0.05).supported

Scope: Sensory profiling attached to a randomized trial of complementary feeding. 13 trained adult assessors (all female, aged 26 to 49) rated on a 0 to 10 line scale. The samples were purées mixed with infant formula, not the juice itself.

Note: Absolute bitterness values are not in the text and appear only in Figure 4 (not read). The comparison appears to be with the lingonberry purée before milk was added.

Adding cow's milk or yogurt to lingonberry and cranberry purées significantly changed their sensory attributes. In particular, the lingonberry milk and the cranberry yogurt were significantly lower in bitterness, flavor intensity and astringency (p<0.001) and also lower in sourness (p<0.05).
Limitations: The main aim was infant acceptance; the sensory profiling is a side analysis. The assessors were 13 adults. Bitterness values appear only in Figure 4; the text gives only p-values.
