Sensory (1)

ajwain — sensory attribute: A report examining the characteristics of the plant describes the taste of the schizocarps of ajwain (carom) in trade as "spicy bitter" (pungent and bitter), and the aroma as "thymol-like".contextual

Scope: Observations of appearance, taste and aroma of 22 herbal spice samples (collected from markets, shops, fields and the food and drug industry; a study in Pakistan). The taste is the authors' description from sensory observation.

Note: This is not a measurement by a sensory panel, and neither the strength of the bitterness nor the components are given. No independent 2nd source has been found. In the same section the taste of many spices is described as "bitter", the taste descriptions are formulaic, and the strength of the bitterness cannot be distinguished.

For the schizocarps of Trachyspermum ammi (ajwain), it records "ovoid to conical, grayish brown, rough surface, breaking softly, thymol-like aroma, and a spicy bitter taste". The methods chapter states that characteristics such as color, taste, aroma and shape were observed with the sense organs and a microscope.
Limitations: This is not a sensory measurement by a panel. Neither the strength of the bitterness nor the components are given. In the same section chili pepper, garlic and others are also described as "bitter", the taste column is formulaic, and the strength of the bitterness cannot be distinguished.
