Reading the bitterness

The English-language Wikipedia article states "Region or state: Ilocos region" in its infobox and "Pinapaitan originated in the Ilocos Region of northwestern Luzon, Philippines." at the start of its main text, placing the origin of pinapaitan (papaitan) in the Ilocos Region of northwestern Luzon, Philippines. The article does not, however, establish whether Ilocos Norte or Ilocos Sur was more central.

A 2007 column by Claude Tayag in The Philippine Star quotes food writer Mickey Fenix’s view: "what makes Ilocano cooking distinct from other Philippine regions is the bitter range of flavors ... This bitterness is sought after in the Ilocos". It lists pinapaitan, imbaliktad, and sinanglaw as part of the bitter range of Ilocos cuisine, positioning that range of bitterness as a distinguishing feature of the region’s food.
