Reading the bitterness

Dried leaf extracts from 30 populations of 10 species, grown under the same conditions, were evaluated by 10 adults using the WHO dilution threshold method. Among these, the bitter values of T. foenum-graecum's TFG1, TFG2, and TFG3 were 9.43, 10.32, and 9.64 ×10³ units/g, respectively, with TFG2 the highest among all samples. This is a value based on the dilution threshold of the extract, not the bitterness intensity felt as a mouthful of food.

In the analysis of the same material, the correlation between diosgenin content and bitter value in fenugreek leaves was r=0.92. However, this correlation is based on pooled data from 30 populations of 10 species, and it is not a dose-response experiment that directly establishes diosgenin as the causal substance of bitterness.

Checked for this overview: Matched to the dried leaf extracts from 30 populations of 10 species grown under the same conditions, the WHO dilution threshold method with 10 adults, and the bitter values of the three T. foenum-graecum populations. / Matched to the r=0.92 correlation, the pooled data from 30 populations of 10 species, and the limitation that it does not establish causation.

Sensory (2)

fenugreek leaves — reported bitterness value: 9.43, 10.32, and 9.64 ×10³ units/g across 3 populations of T. foenum-graecumsupported

Scope: The WHO method, using a panel of 10 adults, on 30 Iran-origin populations grown under the same conditions

Note: Population differences are preserved; this is not treated as a fixed value for fenugreek leaves in general.

T. foenum-graecum TFG1/2/3 were 9.43, 10.32, and 9.64 ×10³ units/g, with TFG2 the largest mean among all samples. However, the Duncan letters in Table 3 are a for all of TFG1, TFG2 and TFG3, so no significant difference is shown among them (or against TEP1 at 9.89 and others).
Limitations: A bitterness value based on the dilution threshold of an extract, not the bitterness intensity of a mouthful as food. The age and training of the 10 adult assessors are not given.

fenugreek leaves — perceived bitterness is associated with: diosgeninpreliminary

Scope: Layer: Food. Correlation data across aqueous leaf extract samples (drying state not stated) from 10 Trigonella species and 30 accessions of Iranian origin (cultivated in the same plot).

"diosgenin content with bitterness value (r = 0.92)". The same section also records a negative correlation (r = -0.83). The sentence is in the form "between TTC and TSC (r = −0.86) and bitterness value (r = −0.83)", which is most naturally read as a correlation between TTC (total tannin content) and bitterness value, but Fig. 9 was not viewed, so it is not settled.
Limitations: This is only a correlation coefficient, not a dose-response experiment that would directly demonstrate that diosgenin is the causal substance producing bitterness. The correlation is from pooled data of 10 species and 30 accessions, not the correlation coefficient for T. foenum-graecum alone. The type of correlation is not stated.
